Paring Knife
The paring knife is a small, short-bladed knife, used for intricate cutting, peeling, mincing and dicing. The blades are simple, sharp and precise.
CBC knives are made from 67 layer hammered damascus steel.
- 10cr high carbon super steel core
- 15 degree bevel (double sided)
- Full tang for balance and strength
- 60-62 HRC hardness
Each knife has an ebony wood handle with brass inlay for left or right grip. The handles are made with natural wood and each will have a unique color and grain pattern.
Damascus Type is a labor-intensive forging process in which multiple layers of two or more types of steel are repeatedly folded. This results in a more brittle core, and can be honed to a significantly sharper and harder edge.
