The Chinese cleaver or Chinese chef’s knife is a thin delicate knife that slices and chops well with height that can be used to scoop up large volumes of product and enough mass that the spine or flat of the blade can be used to crush product before cutting.

  • CBC knives are made from 67 layer hammered damascus steel.

    •  10cr high carbon super steel core
    • 15 degree bevel (double sided)
    • Full tang for balance and strength
    •  60-62 HRC hardness

    Each knife has an ebony wood handle with brass inlay for left or right grip. The handles are made with natural wood and each will have a unique color and grain pattern.

    Damascus Type is a labor-intensive forging process in which multiple layers of two or more types of steel are repeatedly folded. This results in a more brittle core, and can be honed to a significantly sharper and harder edge.
