Santoku Knife
Santoku, which means ‘three virtues’ in Japanese, is an all-purpose knife with a taller blade profile than a gyutou. Its three virtues are the knife’s ability to cut fish, meat and vegetables. Santoku have a flatter ‘belly’ than gyutou and can be used comfortable with an up and down chopping motion rather than a ‘rocking’ type cut.
CBC knives are made from 67 layer hammered damascus steel.

Each knife has an ebony wood handle with brass inlay for left or right grip. The handles are made with natural wood and each will have a unique color and grain pattern.
Damascus Type is a labor-intensive forging process in which multiple layers of two or more types of steel are repeatedly folded. This results in a more brittle core, and can be honed to a significantly sharper and harder edge.
