Chef/ Gyutou are the Japanese equivalent of a typical European chef’s knife. They are the ideal all-purpose kitchen knives and can be used for most tasks. Japanese gyutou are typically lighter and thinner than a European knife, are made out of a harder steel and as a result, hold a better edge. The design features nothing obstructing the edge of the handle end of the blade, so it can be sharpened and thus used entirely. The word gyutou in Japanese means ‘beef knife’.

  • CBC knives are made from 67 layer hammered damascus steel. (33 each side and the 10cr core)

    •  60-62 HRC hardness

    Each knife has an ebony wood handle with brass inlay for left or right grip. The handles are made with natural wood and each will have a unique color and grain pattern. The full tang and tapered bolster result in a very balanced and comfortable feel.

    Damascus is a labor-intensive forging process in which multiple layers of two or more types of steel are repeatedly folded. This protects the core, and the hammered 'tsuchime' finish adds beauty and helps release food easily when cutting.
